Pantry items needed: Chicken breasts or thighs, a can of artichoke hearts, lemon, parsley, garlic, olive oil. Couscous or rice, foil wrap or parchment paper, and spices to play with (any combination of these will work: oregano, basil, thyme, paprika, a za'atar spice blend would be perfect for this.) Vegetables of your choice (you don't need all of these, we will work with what you have... some possibilities include: zucchini, tomatoes, potatoes, red onion, carrots, broccoli, asparagus). Amy joined the Parks and Recreation Department in May 2018. She earned a Bachelor's Degree in Environmental Science from American University and a Master's Degree in Environmental Education/Nonprofit Administration from Western Washington University. Prior to joining our team she worked at North Cascades Institute for 12 years managing their youth leadership programs. Under Amy's guidance our Parks Volunteer Program continues to grow and includes community work parties, park steward programs, school stewardship programs, bark stewards and several large ecological restoration events throughout the year. She coordinates up to 6,500 volunteers who donate nearly 16,000 hours annually helping to restore wildlife habitat, remove invasive species, pick up litter and plant native shrubs and trees. When Amy's not helping to make our community a happier, healthier place to live and work, you can find her spending time with her family and friends hiking, kayaking, skiing, mountain biking, gardening and exploring the Northwest and all of its natural wonders.
